Grilled Plums with Ricotta & Honey

Ingredients
2 Tbs honey, plus more for drizzling
1 Tbs butter, melted
4 plums, halved and pitted
1/2 cup ricotta cheese
1/4 cup whipped cream cheese
2 Tbs granulated sugar
1 lemon, zest only
1/4 cup almonds, sliced
fresh basil leaves, for garnish
Directions
- Heat grill to medium. In a small bowl, combine honey and butter. Brush over the flesh of the plums. In a bowl, combine ricotta, cream cheese, sugar and zest. Refrigerate until ready to serve.
- Place plums on the grill, cut-side down. Grill until slightly charred and honey begins to caramelize, about 3 minutes. Turn the plums; close the grill lid. Cook for 3 more minutes. Remove from grill, and place in a serving dish. Top each plum with a spoonful of ricotta mixture. Drizzle with additional honey; sprinkle with almonds. Garnish with basil.
- Note: Before adding ricotta, plums can be kept warm in a 200° F oven until ready to serve. The same recipe and technique can also be done with peaches.
